1. Temaki Sushi with Wasabi
Ingredients:
- 4 sheets of nori @ 18 x 20 cm
- 75 g cucumber
- avocado
- 75 g fillet salmon
- 50 g wortel
- 2 sheets of lettuce
- 125 g short grain Japanese rice, washed, drained
- 250 ml of water
- 1 tbsp rice vinegar
- tbsp caster sugar
- 1 sdt mirin
- salt
- roasted black sesame
- wasabi
- Japanese soy sauce (shoyu)
How to cook:
- Cut each nori into 3 pieces. Cut the cucumber lengthwise, remove the seeds, cut into matchsticks.
- Cut the avocado in half, cut into thin strips lengthwise. Cut carrots into matchsticks, boil until cooked, remove and drain. Shred the lettuce according to taste.
- Sushi rice: Put rice and water in a saucepan, bring to a boil. Reduce the heat, cook until the water is absorbed (± 5 minutes).
- Cover the pot, continue to cook until the rice is cooked (± 25 minutes), remove from heat. Mix the vinegar, sugar, mirin and salt with the rice, stirring well with a wooden spoon.
- Spread a sheet of nori, put the rice on a sheet of nori. Place a piece of lettuce on top. Add cucumber, avocado, salmon and carrots over the lettuce.

- 8 curly lettuce leaves
- wasabi
- Japanese soy sauce
- pickled ginger (gari)

How to cook:
- Combine rice, vinegar, sugar, mirin, and salt in a bowl, stirring with a wooden spoon until well combined. Divide the rice into 8 equal parts.
- Filling: Combine soy sauce, togarashi, and grated garlic in a bowl, mix well. Coat the yakiniku meat with the seasoning mixture, set aside for ± 20 minutes to allow the flavors to infuse.
- Heat a grill pan over medium heat, add cooking oil, add the yakiniku meat and the marinade. Cook until the meat is cooked but not dry, remove. Leave the remaining oil and spices in the pan, heat the pan again, add the enoki mushrooms. Cook until the mushrooms are slightly wilted, remove.
