  • Olive oil
  • Salt
  • Pepper
  • 1 Medium Non-Stick Pan
  • 1 Small Pot
  • 1 Mixing Bowl
  • 1 Large Non-stick Pan

How to cook Teriyaki Mahi Mahi Delicious:

  • Cook and Cool Rice. Bring a small pot of rice and 11/4 cup water to a boil.
  • Reduce to a simmer, cover, and cook for 15-18 minutes, or until the rice is tender.
  • Remove from the stove and transfer the rice to a plate. Spread in a single layer and refrigerate until cool, 10-15 minutes.
  • While the rice is cold, continue the recipe.
  • Prepare the ingredients for the Mandarin Salad
    Drain the mandarin oranges and coarsely chop them.
  • Trim the bottom end of the broccoli and cut into 1/2″ cubes at an angle.

  • 3 garlic cloves, chopped
  • 1 inch ginger, grated

  • 1 cup fresh pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar

  • For the coconut rice: Heat the oil in a medium saucepan over medium heat. Add the onion and salt and cook until translucent, about 2 minutes.
  • Cook until the coconut milk and rice are boiling.Reduce the heat to medium-low and cover.Cook for about 15 minutes. Remove the lid and puree the rice.
  • For the pineapple glaze: Heat a medium saucepan over medium heat and add oil to coat. Add the garlic and ginger and cook until soft and fragrant, about 2 minutes.

  • Then, add the pineapple juice, soy sauce, brown sugar, Dijon mustard, and lime juice and zest. Bring it to a boil and then reduce the heat. Cook for 10 minutes, or until reduced by a quarter and thick and glossy.
  • For the mahi-mahi and bell peppers, prepare as follows:Heat a grill pan to medium. Coat the grill pan with olive oil.
  • Add the bell peppers and onions and cook until browned, slightly charred and starting to soften. Transfer the peppers to the side of the grill pan.
  • Add a little more olive oil. Salt mahi-mahi on both sides. Grill fish on each side until golden brown, about 3 minutes per side.
  • Coat the mahi-mahi with the pineapple glaze.
  • Turn the fish over and coat it generously on the reverse side.
  • Cook for an additional 2 minutes. Remove from skillet and serve with roasted peppers and coconut rice.
